Pulled Pork Sandwiches and Coleslaw


I have been using my crockpot a lot- I just noticed that after looking at my last few posts. It's summer the crockpot is a wonderful thing, I can do what I want during the day knowing that dinner will be waiting for me each night. I also love the crockpot for softball season. The schedule is crazy, 2 practices and sometimes 2 games a week. We used to eat out a lot. Now I am on this kick of eating at home every night I don't want to give that up so I have to figure out how to get it done. Winter Softball starts at the end of the month- my answer to dinner is going to be the crockpot.

This is my husband's favorite sandwich. I like making these because they are so easy to make- great for busy days. This is also my favorite recipe for coleslaw-simple and always a hit with the family.

Pulled Pork Sandwiches
1 (2-3) lb pork roast
Seasoning salt to taste
Water if needed
1 bottle bbq sauce
6 hoagie rolls

Place pork roast in a crockpot and season to taste with seasoning salt. Cook on low 8-10 hours or until tender. Add a small amount of water to bottom of the crockpot if needed. Once roast is fully cooked shred the meat and return to the crockpot, stir in the bbq sauce and serve on rolls.


Easy Coleslaw

1 bag prepared cabbage slaw
1/2 C mayonnaise
1 Tbsp. red wine vinegar
1 Tbsp sugar

Combine last 3 ingredients and refrigerate covered until ready to use. Mix with shredded slaw just before serving.

  1. This is wonderful for my family!!! One because I LOVE crockpot meals....its easier on me! Two because my hubby and son wont eat a lot of veggies, hence the slaw for me on the side. Its a plus that they love bbq sandwiches ;) Thanks for this
