Paprika Chicken


While I was cooking this chicken my husband came into the kitchen the conversation went something like this:

Hubby:What are you cooking?

Me:Why? (I was expecting some type of complaint to be honest)

Hubby:What do you mean why?

Me:Well is something wrong?

Hubby:Nothings wrong...it just smells so good I can't wait to eat.

Now this is the point where I got a huge smile, after all what woman doesn't want to hear that from her husband.

This was very tender chicken and it had wonderful flavor...as a bonus it made the whole house smell amazing.

Paprika Chicken
3 lbs chicken thighs, bone in, skin on
2 onions, chopped
1 garlic clove, minced
1 tomato, chopped
Oil as needed
1 green pepper, chopped
1 ¼ C chicken broth, divided
2 Tbsp. paprika
1 C sour cream

In a large pot, sauté the onion, garlic and green pepper in oil until soft, add the paprika and mix well. Add the chicken, tomato, and 1 cup of the chicken broth. Bring to a boil then turn down to low to simmer. Cover and cook for 30 minutes or until chicken is tender and cooked through. Add remaining chicken broth and sour cream, stir to mix and serve immediately over egg noodles or rice.
