1 box of manicotti 1 recipe of Marinara sauce 1 (32 oz.) oz container Ricotta cheese ½ C. Parmesan cheese 1 egg, beaten 2 Tbsp Parsley pepper to taste 1 lb. Shredded Mozzarella cheese Nonstick cooking spray
Cook shells according to package directions. Mix ricotta cheese, Parmesan cheese, egg, and pepper. Stuff manicotti with cheese mixture and place in a 9 x 13 inch baking dish coated with non stick cooking spray. Pour marinara sauce over each shells and sprinkle with mozzarella cheese. Bake for 20-30 minutes at 350 degrees.
Marinara Sauce 1 (25 oz) jar spaghetti sauce 1 (14 oz) can diced tomatoes 1 (14oz) can stewed tomatoes 1 (6 oz) can tomato paste 1 onion, diced fine 3 cloves minced garlic 1 tsp. dried thyme 1 bay leaf 1 tsp. oregano 1 tsp. basil
Combine all ingredients and simmer in a slow cooker for 4-5 hours on low or until done.
