Bacon Wrapped Hot Dogs and Picnic Potato Salad

Bacon Wrapped Hot Dogs
6 hot dogs
6 slices bacon
6 hot dog buns
1 green pepper
1 large onion
Oil as needed
Additional condiments as desired

Wrap bacon around hot dogs without overlapping. Place on a rimmed baking sheet and bake at 350 degrees for 20 minutes or until bacon is fully cooked. While hot dogs are cooking sauté green pepper and onion in a skillet until tender.
Serve hot dogs in buns topped with pepper and onion and any additional condiments.

Picnic Potato Salad
8 med. potatoes, peeled, diced, cooked and cooled
5 hardboiled eggs, sliced
3 green onions, sliced
2 stalks celery, sliced
1 (4 oz) can sliced olives, drained
1 C. mayonnaise
1 Tbsp. sweet pickle relish
2 dill pickles, diced
1 tsp. mustard

In a small bowl make the dressing by combining the mayonnaise, pickle relish, and mustard. Place all other ingredients in a large bowl then fold in the dressing gently. Refrigerate for several hours before serving.
