Garlic Lime Chicken Fajitas

Garlic Lime Chicken Fajitas
2 cloves minced garlic
1 tsp dried minced onion
1 tsp cumin
1 tsp oregano
Salt and pepper to taste
Juice of 1 lime
Juice of 1 orange
2 tbsp. oil
1 ½ lbs chicken, cut into bite sized pieces
1 green pepper, cut into strips
1 onion. Sliced and separated into rings

Mix lime and orange juices, oil, garlic, onion, cumin, oregano, salt and pepper in a small bowl. Place chicken in a resealable plastic bag and pour marinade over, let marinate for at least 1 hour. Cook chicken in a large skillet until browned and cooked through. Remove chicken from skillet and add bell pepper and onion, cook until soft about 5 minutes. Return chicken to skillet and toss to mix with the vegetables.

I usually serve this with Spanish Rice.
