Lemon and Herb Chicken


We have been doing a lot of crockpot meals because between homeschooling and softball some days I don't know if I am coming or going.

This was a great chicken recipe but it was so tender it fell apart when we tried to take it out of the crockpot so if you want to serve a whole chicken you should probably roast one in the oven. The flavor was outstanding...I was surprised that you could really taste the lemon and the little cooked cloves of garlic were amazing. By the end of the meal my husband and I were fighting over the remaining cloves...we love garlic around here.

Lemon and Herb Chicken
1 (3-4) lb whole chicken
1 head of garlic, separated into cloves, skin removed
2 lemons, sliced
Seasoning salt to taste
1 sprig fresh rosemary

Wash the chicken and pat dry. Sprinkle inside and out with salt and pepper. Place chicken in the crockpot. Place the rosemary, some garlic cloves and some lemon slices inside the chicken cavity and either lay the remaining cloves and lemon slices on top of the chicken or around the chicken in the crockpot. Cover and cook on low for 8-10 hours or until done. This bird is very tender and may fall apart if you try to remove it whole from the crockpot.
