Zucchini Bread


My husband has been gone this weekend, leaving my daughter and I at home for some time together. Yesterday I taught her how to make this bread. It was so fun even if we did get flour all over the kitchen and each other. This recipe was written just for her by me so that it would be very easy to follow and understand. This makes some yummy bread!!

Zucchini Bread
Nonstick cooking spray
3 C flour
3 eggs
½ tsp baking soda
1 tsp baking powder
1 C oil
1 tsp salt
1 C brown sugar, firmly packed
1 C sugar
3 tsp cinnamon
2 C shredded zucchini, firmly packed
1 tsp vanilla

Combine all ingredients and mix well. Spray a loaf pan with nonstick cooking spray. Pour batter into pan. Bake at 325 degrees for 1 hour or until you can stick a knife in and it comes out clean. Cool for 20 minutes on a wire rack then remove from the pan. Keep refrigerated and wrapped up or freeze if you double the recipe and make 2 loaves.
